The home-fashioned old-styled black bean sauce has been in use since Mr Chan’s first foray into the kitchen back in 1953 in Hong Kong and they still use the same spices as they did back then. MSG was an unknown quantity those days and Joanna’s father insisted on cooking without any artificial flavouring in his early years, a tradition that is still respected in the Live Fish kitchen till today.
